I love experimenting

I am one of those people who cant follow directions to save my life. I always have to do things my way, now this doesn't mean I don't read directions, because I do, I just choose to do it my way. Experimenting in the kitchen is one of my favorite places to throw caution to the wind. So last night, true to form, I decided to have a little adventure in the kitchen. The end results were phenomenal so I thought I would share!

Elly's veggies and rice


Ingredients

Jasmine rice
1 large sweet onion
2 gloves of garlic
1 orange bell pepper 
1 yellow bell pepper
2 portabello caps
handful of fresh cilantro
several fresh basil leaves
1 can fire roasted tomatoes (diced)
1/4 of a lemon
1/4 cup of brandy
salt and pepper


Jasmine rice made according to package/serving amounts.

While the rice is cooking......

Chop the veggies

In skillet melt 1 tbsp butter and 2 tbsp olive oil together
toss in onions and garlic and cook until the onions start to brown. Once the onions are done throw in the other ingredients except the lemon and brandy, Approximately 3 minutes before the veggies are finished (cooked till tender crisp) squeeze the lemon over mixture and pour in brandy, stirring slightly.
To serve ladle veggies onto rice and garnish with a little fresh cilantro.  I served this with snap peas steamed with lemon and pickled beets...
